- 2 ripe bananas mashed
- 1 ½ cups rolled oats not instant
- 1 ½ cups milk dairy or non-dairy
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup maple syrup or honey optional for extra sweetness
- 1/4 cup chopped walnuts optional, but highly recommended!
- 1 tbsp chia seeds optional
- 1 tbsp flaxseed meal optional
Preheat the oven
Preheat your oven to 350°F (175°C). Grease or line your 9x9-inch baking dish with parchment paper for easy removal later.
Mash the bananas
In a large mixing bowl, mash your ripe bananas with a fork or potato masher until smooth. I love using bananas that are overripe because they’re naturally sweeter and make the oatmeal extra moist!
Add the dry ingredients
In the same bowl, stir in the oats, cinnamon, baking powder, salt, and optional chia seeds and flaxseed meal. The oats will soak up the liquid and form a beautiful, soft batter.
Sweeten the mix (optional)
Cool and serve
Let the baked oatmeal cool for about 10 minutes before slicing. Serve it warm, topped with fresh fruit, a dollop of yogurt, or a drizzle of maple syrup.
