- 2½ cups old-fashioned rolled oats
- 3 ripe bananas mashed (about 1½ cups)
- ¼ teaspoon ground cinnamon
- ⅛ teaspoon ground nutmeg
- ½ cup chopped walnuts
- 1 teaspoon baking powder
- ⅓ cup brown sugar
- ½ teaspoon vanilla extract
- 2 large eggs
- ½ teaspoon salt
- 2 cups milk dairy or non-dairy
Preheat the oven to 350°F (175°C). Lightly grease an 8×8 or 9×9-inch baking dish with butter, oil, or nonstick spray. Set aside.
Mash the bananas in a large mixing bowl using a fork or potato masher until mostly smooth. You should have about 1½ cups of mashed banana.
To the mashed bananas, add the eggs, milk, vanilla extract, and brown sugar. Stir until the mixture is well combined. In a separate bowl, combine the oats, baking powder, cinnamon, nutmeg, and salt. Stir to mix evenly.
Add the dry mixture to the banana mixture and stir until everything is fully incorporated. Gently stir in the chopped walnuts, ensuring they’re evenly distributed throughout the batter.
Pour the mixture into the prepared baking dish, spreading it out evenly. Bake for 35–40 minutes, or until the top is golden brown and the center is set. Let it cool for a few minutes before slicing and serving.
