Ingredients
  

  • 2 ripe bananas mashed
  • 1 ½ cups rolled oats not instant
  • 1 ½ cups milk dairy or non-dairy
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup maple syrup or honey optional for extra sweetness
  • 1/4 cup chopped walnuts optional, but highly recommended!
  • 1 tbsp chia seeds optional
  • 1 tbsp flaxseed meal optional

Instructions
 

Preheat the oven

  • Preheat your oven to 350°F (175°C). Grease or line your 9x9-inch baking dish with parchment paper for easy removal later.
  • Mash the bananas
  • In a large mixing bowl, mash your ripe bananas with a fork or potato masher until smooth. I love using bananas that are overripe because they’re naturally sweeter and make the oatmeal extra moist!

Mix the wet ingredients

  • Add the milk, egg, and vanilla extract to the mashed bananas. Whisk everything together until fully combined.

Add the dry ingredients

  • In the same bowl, stir in the oats, cinnamon, baking powder, salt, and optional chia seeds and flaxseed meal. The oats will soak up the liquid and form a beautiful, soft batter.

Sweeten the mix (optional)

  • If you like your baked oatmeal a bit sweeter, add the maple syrup or honey. Stir well.

Add walnuts (optional)

  • If you're using walnuts, fold them into the oatmeal mixture. This adds a nice crunch and nutty flavor that reminds me of banana bread.

Bake it

  • Pour the oatmeal mixture into your prepared baking dish, spreading it out evenly. Bake for 30-35 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.

Cool and serve

  • Let the baked oatmeal cool for about 10 minutes before slicing. Serve it warm, topped with fresh fruit, a dollop of yogurt, or a drizzle of maple syrup.
