Ingredients
  

For the Cake:

  • 2 boxes strawberry cake mix or white if strawberry is unavailable
  • 6 eggs
  • 2 cups sour cream room temperature
  • 2 cups granulated sugar
  • ½ teaspoon salt
  • 1 cup milk
  • 1 cup melted butter
  • 1 teaspoon lemon extract
  • 2 cups fresh or frozen strawberries chopped

For the Cream Cheese Frosting:

  • 32 oz 900g cream cheese, room temperature
  • 2 ½ cups 570g butter, room temperature
  • 24 cups 2700g powdered sugar
  • 4 ½ tsp vanilla extract

Instructions
 

Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

Prepare the Cake Batter:

  • In a large mixing bowl, combine the cake mixes, eggs, sour cream, granulated sugar, salt, milk, melted butter, and lemon extract.
  • Mix until well combined and smooth.
  • Gently fold in the chopped strawberries.

Bake the Cake:

  • Divide the batter evenly between the prepared cake pans.
  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

Make the Cream Cheese Frosting:

  • In a large bowl, beat the cream cheese and butter together until smooth and creamy.
  • Gradually add the powdered sugar, mixing well after each addition.
  • Stir in the vanilla extract until fully incorporated.

Assemble the Cake:

  • Once the cakes are completely cool, place one layer on a serving plate.
  • Spread a layer of cream cheese frosting on top, then place the second layer on top.
  • Frost the top and sides of the cake with the remaining cream cheese frosting.
  • Optionally, garnish with additional strawberries or decorative sprinkles.

Notes

For a more intense strawberry flavor, consider using strawberry puree in the batter or frosting. Simply blend fresh strawberries until smooth, and replace some of the water in the cake mix with the puree.
