Ingredients
  

For the Cake:

  • 2 boxes 15.25 oz each strawberry cake mix (or white cake mix as an alternative)
  • 6 large eggs
  • 2 cups full-fat sour cream at room temperature
  • 2 cups granulated white sugar
  • ½ teaspoon salt
  • 1 cup whole milk
  • 1 cup unsalted butter melted
  • 1 teaspoon lemon extract or vanilla extract as a substitute
  • 2 cups chopped strawberries fresh or frozen, thawed and drained if using frozen

For the Cream Cheese Frosting:

  • 32 oz 4 packages cream cheese, softened
  • cups unsalted butter softened
  • 24 cups powdered sugar yes, that’s 6 pounds
  • teaspoons pure vanilla extract

Instructions
 

Preheat & Prepare Pans:

  • Preheat your oven to 350°F (175°C). Grease and flour your cake pans or line with parchment paper.

Mix Wet Ingredients:

  • In a large bowl, whisk together eggs, sour cream, melted butter, milk, lemon extract, and sugar until well combined.

Incorporate Cake Mix:

  • Gradually add the cake mix and salt to the wet ingredients, mixing with a hand or stand mixer on medium speed until smooth.

Fold in Strawberries:

  • Gently fold in the chopped strawberries with a spatula, ensuring they’re evenly distributed.

Bake the Cake:

  • Divide batter evenly between prepared pans. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.

Cool Completely:

  • Remove cakes from the oven and let cool in pans for 10 minutes. Then transfer to a wire rack to cool completely.

Make the Frosting:

  • In a large bowl, beat the cream cheese and butter until smooth and creamy. Gradually add powdered sugar and vanilla extract, beating until light and fluffy.

Assemble and Frost:

  • Once cakes are cool, layer and frost using the cream cheese frosting. Smooth sides with an offset spatula and decorate as desired.

Notes

For a more intense strawberry flavor, consider using strawberry puree in the batter or frosting. Simply blend fresh strawberries until smooth, and replace some of the water in the cake mix with the puree.
