Ingredients
  

For the Dough:

  • 500 g about 4 cups all-purpose flour
  • tsp about 7 g active dry yeast
  • 1 tsp sugar
  • tsp salt
  • 300 ml warm water about 1¼ cups, ~40°C/105°F
  • 2 Tbsp ≈30 g softened butter (optional, for a richer dough)

For the Filling:

  • 200 g shredded mozzarella
  • 100 g shredded cheddar or any other good melting cheese
  • 2 Tbsp finely chopped fresh parsley or 1 tsp dried
  • ½ tsp garlic powder optional
  • A pinch of black pepper

For the Butter-Garlic-Herb Wash:

  • 2 Tbsp melted butter
  • 1 clove garlic finely minced (or ¼ tsp garlic powder)
  • 1 Tbsp chopped fresh herbs parsley, oregano, or mixed herbs
  • A small pinch of salt

Instructions
 

Step 1:

  • In a large mixing bowl, combine warm water, sugar, and yeast. Stir gently and let it sit for about 10 minutes until the mixture becomes frothy. This activates the yeast.

Step 2:

  • Add the flour and salt to the yeast mixture. Mix with a spoon or by hand until a rough dough starts to form. If using butter, add it now.

Step 3:

  • Knead the dough on a lightly floured surface for about 8–10 minutes until it becomes soft and elastic. If it feels too sticky, sprinkle a little extra flour.

Step 4:

  • Place the kneaded dough in a greased bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm place for about 1 hour, or until doubled in size.

Step 5:

  • While the dough is rising, prepare the filling. In a small bowl, mix together the shredded mozzarella, cheddar, parsley, garlic powder, and black pepper.

Step 6:

  • After the dough has risen, punch it down gently to remove air bubbles. Divide it into equal portions (depending on how many breads you want to make).

Step 7:

  • Roll out one portion into a circle (about ½ inch thick). Spoon some of the cheese filling into the center, then fold the edges over to seal completely. Gently flatten the stuffed dough ball.

Step 8:

  • Place the prepared stuffed breads on a lined or greased baking tray. Cover and let them rest for another 15 minutes while preheating the oven to 200°C (400°F).

Step 9:

  • Bake in the preheated oven for 20–25 minutes, or until the breads are golden brown on top and cooked through.

Step 10:

  • While still warm, brush the tops with the melted butter-garlic-herb mixture. Let them cool slightly before serving. The bread will be soft with gooey melted cheese inside.

Notes

Notes: You can experiment with different cheeses such as gouda, provolone, or pepper jack. For extra flavor, sprinkle sesame or nigella seeds on top before baking. These taste best fresh but can be reheated in the oven at 180°C (350°F) for a few minutes.
