Equipment

  • Mixing bowl
  • Electric mixer (optional)
  • Measuring cups and spoons
  • 9×13 inch baking pan
  • Rubber spatula
  • Toothpick (for testing doneness)

Ingredients

  • 1 box 15.25 oz strawberry cake mix
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup fresh strawberries hulled and chopped
  • 1 cup powdered sugar for frosting
  • 2 tablespoons milk for frosting
  • 1 teaspoon vanilla extract for frosting
  • Optional: Whipped cream and additional strawberries for serving

Instructions

  • Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease your 9x13 inch baking pan with cooking spray or butter to ensure the cake comes out easily.
  • Mix the Cake Batter: In a large mixing bowl, combine the strawberry cake mix, vegetable oil, and eggs. Using an electric mixer or a whisk, mix until well combined and smooth. This should take about 2-3 minutes.
  • Add Strawberries: Gently fold in the chopped fresh strawberries using a rubber spatula. Be careful not to overmix, as you want to preserve the integrity of the strawberries.
  • Pour the Batter: Pour the batter into the prepared baking pan, spreading it evenly with the spatula.
  • Bake the Cake: Place the pan in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. The top should be lightly golden.
  • Cool the Cake: Once done, remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
  • Prepare the Frosting: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency by adding more milk or sugar as needed.
  • Frost the Cake: Once the cake is completely cool, drizzle or spread the frosting over the top. You can be as generous as you like!
  • Serve: Cut into 12 slices and serve with a dollop of whipped cream and fresh strawberries, if desired.

Notes

Make sure not to overbake the cookies. They will continue to cook slightly after you remove them from the oven, so pulling them out while they’re still soft ensures a perfectly chewy texture once they cool down.
