Equipment

  • 9x13 inch baking sheet
  • Electric mixer or whisk
  • Mixing bowls
  • Rubber spatula
  • Measuring cups and spoons
  • Cooling rack

Ingredients

  • 1 box of white cake mix
  • 1 cup of pureed fresh strawberries
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon baking soda
  • A pinch of salt

For the strawberry cream cheese frosting:

  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 1/2 cup pureed strawberries
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

Preheat the Oven

  • Before you get started, preheat your oven to 350°F (175°C). Grease and flour your baking sheet to prevent sticking.

Prepare the Cake Batter

  • In a large bowl, mix the cake mix, pureed strawberries, eggs, vegetable oil, sour cream, vanilla extract, baking soda, and salt. Beat the mixture with an electric mixer for about 2 minutes until it’s smooth and combined.

Bake the Cake

  • Pour the batter into the prepared 9x13 inch baking sheet and spread it out evenly. Bake the cake for 30 minutes, or until a toothpick inserted in the center comes out clean. Remove from the oven and let it cool on a rack.

Make the Strawberry Cream Cheese Frosting

  • While the cake is cooling, beat the softened cream cheese and butter in a medium bowl until smooth and creamy. Add in the pureed strawberries and vanilla extract, and then slowly mix in the powdered sugar. Continue beating until the frosting reaches a fluffy consistency.

Frost the Cake

  • Once the cake has completely cooled, spread the strawberry cream cheese frosting evenly over the top of the cake. Be generous with the frosting—it’s what makes this cake irresistible!

Slice and Serve

  • Cut the cake into squares, serve, and enjoy! You can garnish each slice with a fresh strawberry for an extra touch.

Notes

When making this strawberry sheet cake, I always recommend using the freshest strawberries possible for the best flavor.
The sweetness and natural fragrance of fresh strawberries really elevate the cake and make every bite a joy.
If strawberries are out of season, you can use frozen berries, but remember to thaw them properly and drain the liquid to prevent a soggy cake.
