Ingredients
  

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter softened
  • Confectioner’s sugar for garnish
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • ½ cup whole milk
  • 1 cup sugar
  • Fresh berries for serving

Instructions
 

  • Set your oven to 350°F (175°C) and grease a 9-inch round cake pan with butter or line it with parchment paper. In a medium-sized bowl, sift together the all-purpose flour, baking powder, and salt.
  • In a large bowl, beat the softened butter and sugar with an electric mixer until the mixture becomes light and fluffy, about 3-4 minutes.
  • Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredients to the butter mixture, alternating with the milk. Start and end with the dry ingredients. Mix until just combined. Do not overmix.
  • Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cake cool in the pan for 10 minutes, then remove it from the pan and place it on a cooling rack to cool completely.
  • Once the cake is cool, dust with confectioner’s sugar and serve with fresh berries on the side. Enjoy!
